    The most beautiful clusters are selected. The grapes are harvested in perforated crates and undergo cold pre-fermentation maceration in a cold room in order to extract the aromas and tannins. Then the vinification takes place in oak barrels (new or a single wine) and the aging continues in the same barrels for a minimum of 18 months.
